Smothered Okra

Ingredients
2 tablespoons vegetable oil
1 cup onion, thinly sliced
4 cups okra, whole, stems removed
3/4 cup tomato, peeled, seeded, chopped
salt and black pepper to taste
1/8 teaspoon cayenne
1/8 teaspoon chili powder
1/8 teaspoon thyme (dried)

Directions
  1. heat the oil in a saute pan. Add the onion and saute over low heat until lightly brown.
  2. Add the okra, tomato, and seasonings; cover and smother until the okra is tender. Smaller okra will take less time to cook than larger pods.
Critique
Chef Since the title says "smothered", should smother the okra more with the salad; otherwise the okra could dry out.

Personal/Team:this tasted alright, okra was cooked nicely, just not my favorite vegetable overall.

Lessons Learned: If okra is cooked too long, it can become mushy and fall apart, you want to have some "bite" to it. This vegetable seems to go well when mixed with other things and when used as a thickener, but on it's own, it's pretty strong and has an odd texture. Would be good fried with a remoulade.
