Candied Sweet Potatoes

2 sweet potatoes (28 oz each)
4 tablespoons butter
4 tablespoons brown sugar
pinch nutmeg
water, as needed

  1. Preheat the oven to 350F.
  2. Wash the sweet potatoes and bake in the oven until tender.
  3. Cool and peel the sweet potatoes, cut them into 1/2 inch slices.
  4. Layer the sliced sweet potatoes in a buttered casserole dish. Dot each layer with the butter, and sprinkle with brown sugar and nutmeg
  5. Add a little water and bake until the top is crisp. Serve immediately.

Chef: brown sugar is cooked nice and compliments the potato without overpowering it; the texture is nice.

Personal/team: very flavorful, was a little too soft and fell apart; could have caramelized more.

Lessons Learned: you can under-roast the potatoes slightly and then finish cooking with the flavorings to give it caramelization while maintaining the potato structure.
