Candied Sweet Potatoes
Ingredients
2 sweet potatoes (28 oz each)
4 tablespoons butter
4 tablespoons brown sugar
pinch nutmeg
water, as needed

Critique
Chef: brown sugar is cooked nice and compliments the potato without overpowering it; the texture is nice.
Personal/team: very flavorful, was a little too soft and fell apart; could have caramelized more.
Lessons Learned: you can under-roast the potatoes slightly and then finish cooking with the flavorings to give it caramelization while maintaining the potato structure.
2 sweet potatoes (28 oz each)
4 tablespoons butter
4 tablespoons brown sugar

Directions
- Preheat the oven to 350F.
- Wash the sweet potatoes and bake in the oven until tender.
- Cool and peel the sweet potatoes, cut them into 1/2 inch slices.
- Layer the sliced sweet potatoes in a buttered casserole dish. Dot each layer with the butter, and sprinkle with brown sugar and nutmeg
- Add a little water and bake until the top is crisp. Serve immediately.
