2 avocados, ripe
1/2 cup red onion, 1/4 inch dice
1 jalapeno chile, seeded, deribbed, minced
1/4 cup cilantro leaves, roughly chopped
1/2 cup tomato, peeled, seeded, 1/4 inch dice
2 tablespoons lemon juice
1/2 teaspoon salt
1/8 teaspoon white pepper
1 tablespoon lime juice

  1. Peel and pit the avocados.
  2. Place the avocado pulp in a bowl and mash to a chunky texture (use a fork to get the best texture).
  3. Add the remaining ingredients and mix thoroughly. Season to taste.
Chef: good flavor; moist and rich

Personal/Team: very tasty, nice tang form the lime juice

Lessons Learned: I have made a lot of guacamole in the past and one thing I really like to add is a hint of olive oil (1 tsp). I also like to add a little bit of ground cayenne for spice.
