Chipotle Mashed Potatoes

1 lb potatoes, peeled, 1 inch dice
1/4 cup onions, 1/4 inch dice
2 chipotle peppers (canned), chopped
1 teaspoon cumin
4 tablespoons unsalted butter
1/2 cup cream, warm
salt and pepper to taste

  1. Boil potatoes in salted water until softened.
  2. While potatoes are boiling saute onions, peppers and cumin in the butter until onions are soft.
  3. After potatoes are cooked, drain water and mash with ricer or food mil.
  4. Combine all ingredients, but don't overmix or potatoes will get gummy.

Chef: Red from peppers looks nice, could use more salt, there are some chunks in the potato, but for a rustic dish, that is ok.

Personal/Team: It looks nice and you can see the peppers which indicate the flavor and the flavor is really powerful. I agree it could have used more seasoning, but overall a good flavor.

Lessons Learned: Mashed potatoes offer a blank canvas that you can flavor however you like. It's easy to add flavors that will compliment whatever you are serving and have an interesting side. The key is to cook ingredients seprately and mix while everything is warm and don't overmix. It i a matter of preference how much of each thing you add, so recipes aren't really needed, just creativity.
