Floribbean Slaw

2/4 cup green cabbage, julienned
1/2 cup red bell pepper, julienned
1/2 cup green bell pepper, julienned
3/4 cup carrots, julienned
3/4 cup yellow squash, julienned do not use center)
1/4 cup mayonnaise
1/4 cup sour cream
1/2 cup cilantro, chopped
salt and black pepper to taste.

1. combine all ingredients and mix thoroughly. let flavors combine for at least 1 hour.
2. Taste and adjust seasoning; serve cold.

Chef: nice cuts and sizes, elegant, nice tang, but not over dressed

Personal/Team: good colors from all ingredients, bright flavor, was a nice compliment to the ceviche

Lessons Learned:  The key to a good cole slaw is consistent knife cuts and not overdressing the salad. You don't want it to be soggy.
